Ingredients:
4 to 6 pounds chicken fryers, cut up
4 tbsp butter or regular margarine, melted
1 cup brown sugar
1/2 tsp grated orange peel (orange part onl, y)
1/4 tsp ground ginger
1/2 cup orange juice
1 lb dark sweet cherries, drained (1 can, )
Instructions:
This is a simple and easy way to prepare chicken, one of the cheapest
meats in the U.S.
Yield: 8 Servings
Place the cut up chicken in a large baking pan. Pour the melted
butter over the chicken. Combine the brown sugar, orange peel,
ginger, and orange juice, blending well, and pour over the chicken.
Bake in a preheated 350 degree F. oven for 45 minutes. Remove and
add the cherries, then return to the oven and bake an additional 30
minutes, or until the chicken is golden brown and tender.
