2 each med onions, coarsely chopped
2 tbsp olive oil
1 cup fresh parsley, chopped
1 tsp dried tarragon, crumbled
1/2 tsp allspice
1/4 tsp cinnamon
1 salt & pepper to taste
1/4 cup cognac
1/3 cup dry white vermouth
