Chicken Salad Recipes

Ingredients:

1 wilson bwvb02b
1 lb kidney beans -- cooked or
1 canned
1 bunch trimmed scallions -- thinly
1 sliced
1 roasted red pepper -- diced
1 lb grilled chicken breast --
1 boneless, skinless
2 tbsp mayonnaise
2 tbsp chili powder
1 tbsp ground cumin
1/3 cup low-fat buttermilk
2 tbsp hot pepper sauce
1 salt and pepper to taste
2 tbsp flat-leaf parsley --
1 chopped

Instructions:

Toss kidney beans with scallion, roasted red pepper and grilled
chicken breast. Mix mayonnaise with chili powder, cumin, buttermilk,
hot pepper sauce and salt and pepper to taste. Toss with the bean
salad, along with the chopped parsley. Serves 4.
