Ingredients:
4 chicken breasts, deboned
1/4 cup flour
1 cup dry bread crumbs
1 egg
1 tbsp parsley
1/2 tbsp chopped chives
1/2 tsp tarragon
1 tsp salt
1 tsp black pepper
1 tsp garlic powder
4 slices of swiss cheese
4 slices of boiled ham
Instructions:
Place deboned chicken breasts between two sheets of plastic wrap and
flatten with a meat mallet. Sprinkle with salt and pepper. Mix
chives, parsley, tarragon, shredded boiled ham, diced swiss cheese
and 1/2 cup of bread crumbs in a bowl. Spoon mixture into middle of
chicken breasts and sprinkle with garlic powder. Fold breasts over
filling (taco style) and seal edges (hold together with toothpicks if
necessary. Roll breasts in flour, dip in beaten egg and coat with
remaining bread crumbs. Breasts can be deep-fried or baked in a
lightly-greased baking dish at 375 F for 1 hr.
