Ingredients:
4 each skinless boneless chicken
1 breast
2 tbsp vegetable oil
1 salt -- to taste
1 1/2 tbsp fresh ginger root -- chopped
1 or grated
1 can low sodium chicken broth
2 tsp fresh cilantro -- minced
Instructions:
In a large, non-stick skillet, over medium heat, heat oil. Add
chicken and cook, turning until the surface turns white. Remove to
shallow baking dish and sprinkle lightly with salt, if desired. Stir
in ginger and cook for 1 minute. Sprinkle flour over surface of
skillet and allow it to brown slightly. Gradually add broth, stirring
constantly as mixture thickens. Spoon sauce over chicken and bake for
about 20 minutes, until chicken is cooked through. Sprinkle with
cilantro/parsley and serve.
