Ingredients:
4 boneless, skinless chicken breasts
4 cl garlic, chopped
1 tbsp grated ginger
1 tbsp lemon juice
1 tbsp garam masala or curry paste
1 tbsp vegetable oil
1/2 cup yogurt
1 mint chutney:
6 green onions, finely chopped
1 tbsp grated ginger
1 tsp finely chopped jalapeno pepper
2 tsp granulated sugar
1 tbsp lime juice
1/2 cup chopped coriander leaves
1 cup chopped mint leaves
1 cup plain yogurt
1 salt to taste
Instructions:
Combine garlic, ginger, lemon juice, garam masala, vegetable oil and
yogurt. Spread on chicken breasts. Let marinate for 1 hour.
Combine all ingredients for mint chutney in food processor or blender.
Puree until smooth.
Place chicken on grill, close cover and grill chicken for 5 minutes
per side or until juices run clear. Serve with mint chutney on side.
