Ingredients:
1 tbsp vegetable oil
4 boneless and skinless chicken brea, st halves
2 3/4 oz sliced black olives, drained
2/3 cup apricot preserves
1 tbsp lemon juice
1/2 tsp ground ginger
1/2 tsp ground cinnamon
1/2 tsp salt
Instructions:

large skillet, heat the oil over medium heat; add the chicken breasts
and cook for 3 to 5 minutes per side, until browned on both sides.
Meanwhile, in a small bowl, combine the remaining ingredients. Pour
the mixture over the chicken and reduce the h NOTE: Serve over
steamed rice or, for a real Moroccan dish, couscous.
