Ingredients:
1 cup thinly sliced cabbage
1/2 cup red pepper, seeded and sliced thin, (1/2 pepper)
1 tbsp mayonnaise
1 tsp mustard
1 salt and pepper (opt)
8 slice seeded rye bread
1 1/2 cup shredded smoked chicken
Instructions:
Combine the cabbage, red pepper, mayonnaise, and mustard in a bowl
and let the mixture stand for approximately 30 minutes. Taste for
seasoning and add salt and pepper to taste, if necessary.
Spread the cabbage mixture on half of the bread slices. Add a thick
layer of shredded chicken to each, and top with a second slice of
bread.
